Great collection, relatively simple but delicious recipes.

There are some very good recipes in here. Most importantly, America's Test Kitchen strives to make you a high-level home cook without using overly complicated recipes or ingredients your local grocery would never carry. Too many recipes nowadays strive to be unique, and as a result you end up with a shopping list 30 items long and your meal costs $11 per serving. I want to be able to cook very tasty meals for my family without spending a fortune or passing out in the kitchen.I used several recipes at Thanksgiving. Delicious, hearty dishes without going overboard.FYI, Buy it on Amazon instead of through ATC. It could be different for you, but when I tried to order through their website, the fine print showed that I was getting involved with one of those (UNLESS YOU DECIDE TO CANCEL...) ordeals. No thanks. Amazon price was about twice as much, but you get what you pay for. I got a great cookbook without that headache.
New/improved techniques from "old", familiar recipes that give chef-worthy results

This is another outstanding cookbook put out by America's Test Kitchen. There are a large variety of recipes (I'll list each chapter below). If you're not familiar with the PBS series, their test kitchen tries each recipe over and over... and over again, until it is perfected. This cookbook is from the first 15 seasons of the TV series, plus all of their product reviews (they also test these products several times). They present new techniques of how to make each recipe that stray from the norm (and you HAVE to do it their way...one else your end result will be a big failure). These techniques aren't hard to do, but it may seem odd, if you're familiar with your own way to cook a particular recipe. Preceding each recipe, they give the reasoning of why they've done these steps and why they will work. Keeping this in mind, there may be specific things you'll need to perform, but the end result will be a perfect dish. You'll look like you are a trained CIA chef. Your friends and family will be in awe of you!The picture above is of a raspberry pie that I adapted from the blueberry pie recipe in the cookbook. The only thing I subbed out were the raspberries for the blueberries. The crust recipe was different from my original recipe. It has much more fat (butter and shortening) than what I'm used to, but I wanted to give it a go. Oh my, I couldn't believe what I had been missing! It was so buttery and super flaky (I mean REALLY flaky). You need to purchase the cookbook just for this reason alone. I ended up giving away most of it because I would've inhaled it all.When I bought this book, I was aware that the America's Test Kitchen TV series is still running. That being said, each year a new, updated cookbook is put out. For this reason, I found my copy of this one under the "used and new" option here from Amazon.Here are the chapters included in this 2001-2015 America's Test Kitchen cookbook:1. Soup's on!2. America's Test Kitchen/Cooks Illustrated magazine always has the very best recipes (it is the same people that do both). I have lots of the magazines from over the years, but sometimes I can't find the copy that has the recipe in it I am looking for. This book solves that problem by being a comprehensive collection from the show.You might wonder what is the value of buying a cookbook in today's age when a Google search can yield any recipe you want. It is because the recipes in this book work. They are the absolute best tasting version of each dish you can make. Yes, they are a little more involved than popping something in the microwave, but you will be rewarded with dishes that have sophisticated flavors. Whenever I need to cook for a group, I always look for a test kitchen recipe first. People are always amazed at what I am able to prepare, but really, it is the test kitchen recipes that are the secret weapon in being able to prepare great dishes.The book is comprehensive too. Asian dishes. Yes. Italian. Those too. French - of course. Deserts - You bet. You don't need a cookbook for each cuisine, just this one, which has the 25 or so best for each and you will be set. Finally, the back section contains a summary of all of the best tested products over the years. As I replace items in my kitchen, I'll look here first to find the best of each and then buy that.Is the book large and heavy? Yes. But it is well worth it for the hundreds of great recipes contained inside.

We bought this book after my brother bought it for my sister for Christmas. All of a sudden she started showing up to parties with the best foods. Her secret recipes are not so secret it turns out, and she filled us in on how great this book is.Every version of everything in this book is the best of five different approaches they tested. They did all the hard work for you that comes with trial and error of recipes. There are also great instructions and techniques on almost anything you can think of that can elevate any food you're preparing. An example of this was in their banana bread recipe where they suggest cooking the banana down to get a nice rich, deep banana flavor that's not overpowering.Solid book, basically my lifeline and only hope in the kitchen. Ha
Overall good, with a caveat.

This review is for the Kindle version. As an experienced cook, I enjoy the book and the ATK methodical approach for problem solving. The quality is good and errors are very few. It has filled in a few gaps in my knowledge, which is a plus. However, I'm not sure I quite love the yearly publishing model. There appears to be no way to add the new year's information without purchasing the whole book each year. Since they do publish the book yearly, I wish that an update/addendum with the yearly new material, at least for the Kindle version, were offered. The idea of people replacing their book yearly is a stretch.
